Organic garden ingredients bring freshness and authentic Dalmatian flavours to every dish served at Gverović-Orsan near Dubrovnik.

When people think about Gverović-Orsan, they usually imagine seafood, sunsets and dinners by the sea. What many don’t expect is that part of the experience actually begins in our garden.

Over the years, we started growing our own vegetables because it simply felt natural to us. In Dalmatia, food has always been closely connected to the land, the season and the ingredients available at that moment. So instead of relying only on deliveries, we wanted to keep a part of that tradition alive in our own way.

And honestly, food just tastes different when it comes straight from the garden.

The kitchen follows the garden

Sometimes the garden shapes the menu more than the kitchen does.

In the morning, we pick what’s ready. Then later that same day, those ingredients find their way onto the table. Tomatoes, fresh herbs, salad, seasonal vegetables, simple things, but full of flavour.

As a result, the dishes feel lighter, fresher and more connected to the Mediterranean way of cooking. We never wanted to overcomplicate food here. Instead, we’ve always believed good ingredients should speak for themselves.

People often ask us why the vegetables taste so fresh. And the answer is actually very simple: they haven’t travelled far.

Because the ingredients move directly from the garden to the kitchen, they keep their texture, aroma and natural flavour. Consequently, even the simplest plate suddenly feels more special.

That’s also why so many guests remember the food here in such a personal way. It doesn’t feel manufactured or overly polished. It feels real.

A slower and more honest way of doing things

Of course, growing your own vegetables takes more work. It’s slower, less predictable and definitely not the easiest option. Still, that approach reflects who we are.

At Gverović-Orsan, we’ve never wanted the experience to feel rushed. Instead, we want guests to relax, enjoy the moment and feel connected to the place around them. The garden became part of that feeling naturally.

More than vegetables

In the end, the garden means much more to us than simply growing produce. It reminds us of the way people lived here for generations. Families grew their own food, cooked slowly and spent long evenings together around the table.

And even today, that same atmosphere still exists here. Some guests come for the seafood and others come for the sunsets. But very often, they return because everything feels genuine.
